Review: Finally, a coffee shop who gets their Intelligentsia brew right!

I love Intelligentsia coffee, but the problem with this Chicago coffee is not the coffee itself, but the Chicago ethic of coffee. DARK DARK DARK…BURN BURN BURN.

Christ, don’t these people know that the lighter the roast, the more caffeine there is per cup of coffee? Roasting coffee beans burns off some of the caffeine contained within! The more you roast, the weaker the cup of coffee…and the more it tastes like a mechanic’s sweaty chest hair.

Filter, however, gets it right. They brew intelligentsia and don’t overbrew to make the coffee taste like it has been brewing over a campfire for three days.

Though Filter charges a bit much for it’s coffee compared to other indie shops in the city, you can’t expect much more from a Wicker Park location. Gotta keep those yuppies coming in and those artists starving!
