Review: You ever hear a self-proclaimed cheese expert talk about the newest cheese they bought for a quarter of a million dollars? It’s insufferable. Usually it’s over a glass of wine (they have wine and simultaneously scoff at your foaming pint of bargain priced PBR) and includes talk of “pairing” “earthiness” and “bite.” God bless those people. A part of me wants to be one of them. Sometimes I try to be.

When it comes to Next Generation Organic Raw Milk Cheese, I am just a happy camper. Next Generation Dairy uses organic raw milk to make their cheese and only heat the milk up to the temperature it would be as it comes out of the cow. I’m grateful for this time and attention that the cheesemakers take, but I won’t pretend to fully understand or even taste the difference.

I do, however, taste a great cheddar cheese. Though mild, the complexities of the cheese stand out, providing a full and flavorful earthiness with a minor bite. Great in any dish you might use cheese for (mac n’ cheese, egg sandwiches, etc…), Next Generation’s Raw Milk Mild Cheddar would also pair quite well with seasonal fruit and your favorite wine on a hot summer day by the rooftop pool.

Now let me just adjust my monocle.

    In my professional opinion as a food safety microbiologist, drinking “commercial” raw milk is a high-risk behavior. If you personally milk your own cow, are careful with your sanitation techniques (both on the udder and the equipment), and drink the milk promptly, that’s perhaps another story. Contrary to the opinion of some, the enzymes present in raw milk do not prevent all bacteria from surviving and growing in the milk. Otherwise, there would be no illnesses attributed to raw milk. There would also be no cheese or yogurt made from raw milk, because the “good” bacteria wouldn’t be able to grow, either.
