Review: I’ve long heard (and seen on the Food Network) about Bobak’s Sausage Company and their glorious selection of cured pork sausages. Finally, I made my way to the stretch of South Archer just before Midway Airport on a blisteringly hot Sunday.

Walking into Bobak’s for the first time is like your first time on a roller coaster. The deli counter stretches from the front end of the store to the back. First you stare in amazement and watch the others take the ride. Then you wait in line patiently. Finally, your number is called and you take the plunge, challenging yourself to limit your porcine desire to just a few selections that won’t strain your pocketbook. Lucklily, Bobak’s prices are some of the best in the city. The same can be said for their sausage.

Bobak’s makes sausage the old fashioned way by letting some sausages air-cure in unrefrigerated rooms. According to an article in the October 2007 issue of Saveur Magazine, this is technically an illegal practice in the states, but in the city of Chicago, corruption extends even to sausage making. Say what you will about our history of tommy gun toting gangsters and crooked politicians,but there are a few benefits to be had. Bobak’s is on the top of that list.

The Debic style smoked polish sausage hung on a separate rack in front of the deli case where any wandering hands could blithely grope it. Thinking that the most danger and chance of contamination would probably result in the best flavor, I took my chances and had the deli-person cut me off a small section of the continuous loop of encased meat.

Debic style smoked sausage has a mild and somewhat ham-like taste to it with just a hint of salt and a trace of an anise-like flavor. The texture is tender with a medium meaty body which makes it an excellent cold sausage for a snack as well as a delicious frying meat to serve with breakfast. This sausage has fed me for two weeks and has yet to disappoint me. Though no one flavor is paramount, Debic style polish sausage is an inexpensive option for a reliable and versatile anytime sausage to have around the kitchen.
